Fresh Fish - Where to Buy, What to Look For, And How to Cook

Always buy sustainable fresh fish and avoid any threatened and declining species, ask your fishmonger if you re unsure and adapt the recipe to suit the fish. To get the freshest fish, buy from a fish market or a good fishmongers where the turnover is high. In preference, buy a whole fish or have steaks or fillets cut to order, as cutting immediately exposes new surfaces to microbes and the air.
